Chef Thomas Musson

Founder of Dining by Design TCI, Chef Thomas Musson creates personalized private villa dining experiences throughout the Turks and Caicos Islands. Every menu and service plan is shaped around the guests, their villa, their preferences, and the rhythm of their stay.

A native of Canada, Thomas brings more than 30 years of culinary experience to his work. His earliest inspiration came from his mother, a Swiss native who introduced him to the discipline and pleasure of cooking. The first dish he helped her prepare was spaghetti carbonara, which remains his favourite today.

Thomas began his formal training in the Culinary Arts Program at Fanshawe College in London, Ontario. His desire to travel then took him to Scotland, where he became Sous Chef at the Claymore Hotel. Working in the Highlands deepened his appreciation for fresh, seasonal ingredients and helped shape the philosophy he still brings to his cooking.

He later traveled to Switzerland and spent his time with family and in restaurants across the country. These experiences established a strong foundation in classic French cuisine and broadened his technical range.

Returning to Canada, Thomas continued his studies at George Brown College in Toronto and interned with renowned chef Michael Stadtlander at Eigensinn Farm. He went on to work as Chef de Tournant for the Distillery Group, moving between multiple restaurants, menus, and kitchen brigades. He further refined his fine-dining skills at Habitat Lounge and Canoe, developing the ability to deliver precise, high-level cuisine for large numbers of guests.

His career later took him west to Whistler, British Columbia, where he cooked at Après, a classic French restaurant, before returning to Toronto for another period at Canoe. The opportunity to work in the Turks and Caicos Islands eventually brought him to the Caribbean, where he joined the kitchens of leading resorts and fine-dining restaurants.

Today, Thomas brings that depth of experience directly to guests staying in private villas. His approach is personal, thoughtful, and grounded in professional service. He is grateful for the many clients who return year after year and who continue to recommend Dining by Design TCI to family and friends.
